DECADENT CHOCOLATE MOUSSE

INSTRUCTIONS
MELT THE CHOCOLATE
- Place the chopped chocolate in a heatproof bowl over a saucepan of simmering water (double boiler method).
- Stir until smooth and completely melted. Remove from heat and set aside to cool slightly.
PREPARE THE EGG WHITES
- In a clean medium bowl, use a hand mixer or whisk to beat the egg whites with a pinch of salt until soft peaks form.
- Gradually add the sugar, one tablespoon at a time, beating until stiff, glossy peaks form. Set aside.
WHIP THE CREAM
- In a large bowl, whip the cold heavy cream until soft peaks form. Add the vanilla extract and gently mix to combine. Be careful not to overwhip.
COMBINE THE MIXTURES
- Stir the egg yolks into the melted chocolate, ensuring the chocolate is not too hot to prevent scrambling the yolks.
- Fold in one-third of the whipped cream to lighten the mixture, using a spatula.
- Gently fold in the beaten egg whites in two additions, being careful not to deflate the mixture.
- Finally, fold in the remaining whipped cream until fully incorporated. The mousse should be light and airy.
CHILLED AND SERVE
- Spoon the mousse into serving glasses or ramekins.
- Cover and refrigerate for at least 2 hours, or until set.
- Before serving, garnish with fresh berries, whipped cream, or shaved chocolate if desired.
