INSTRUCTIONS

This decadent chocolate mousse is a crowd-pleaser, balancing the intensity of dark chocolate with a creamy, fluffy texture. It’s rich in flavor yet light enough to enjoy after a meal. A simple and elegant dessert for chocolate lovers!

MELT THE CHOCOLATE

  • Place the chopped chocolate in a heatproof bowl over a saucepan of simmering water (double boiler method).
  • Stir until smooth and completely melted. Remove from heat and set aside to cool slightly.


PREPARE THE EGG WHITES

  • In a clean medium bowl, use a hand mixer or whisk to beat the egg whites with a pinch of salt until soft peaks form.
  • Gradually add the sugar, one tablespoon at a time, beating until stiff, glossy peaks form. Set aside.


WHIP THE CREAM

  • In a large bowl, whip the cold heavy cream until soft peaks form. Add the vanilla extract and gently mix to combine. Be careful not to overwhip.


COMBINE THE MIXTURES

  • Stir the egg yolks into the melted chocolate, ensuring the chocolate is not too hot to prevent scrambling the yolks.
  • Fold in one-third of the whipped cream to lighten the mixture, using a spatula.
  • Gently fold in the beaten egg whites in two additions, being careful not to deflate the mixture.
  • Finally, fold in the remaining whipped cream until fully incorporated. The mousse should be light and airy.


CHILLED AND SERVE

  • Spoon the mousse into serving glasses or ramekins.
  • Cover and refrigerate for at least 2 hours, or until set.
  • Before serving, garnish with fresh berries, whipped cream, or shaved chocolate if desired.
